This week's Tuesdays with Dorie (TWD) recipe was chosen by Sihan of Befuddlement: Blueberry Crumb Cake.
It's a very simple breakfast cake that only takes a few minutes to throw together, but make sure you plan ahead. Not only does the butter need to be at room temperature, but so do the eggs. I have a tendency not to read a recipe all the way through until I am actually making it and did not realize the eggs needed to be at room temperature until I was ready to add them to the batter! Since I already had my oven preheating, I actually stuck them on the oven rack (with the door open) for about 10-20 seconds at a time, and that seemed to work really well :) But really, it would be much easier if you just set your eggs out at the same time you set the butter out!
This cake was absolutely delicious. I love anything with a crumb/streusel topping, so this was right up my alley. I don't like nuts, so I omitted those from the topping and it still came together nicely. I used frozen blueberries in my cake and actually increased the amount of berries by 50% and found it to be just perfect.

* Recipes notes:
- I used the zest of an entire orange instead of just 1/4.
- I used 3 cups of frozen blueberries instead of just 2 cups.
- I baked mine in an 8-inch round piece of bakeware and had to bake for a total of 75 minutes since my cake was slightly thicker than a cake that would have been baked in an 8-inch square pan.
- Wrapped well, the cake keeps at room temperature overnight.

The more berries the better! You know, I always forget about taking the eggs out of the fridge. I usually hand them over to someone with warm hands and tell them to hold the eggs for me..hahah. It works!

ReplyDeleteI'm really bad at getting eggs to room temperature. I do a little eye roll every time I see a recipe like that because I'm usually noticing it right when I need to use them. Your cake looks delicious!

ReplyDeleteA little trick to room temperature eggs--set them in a dish of hot water for 1-2 minutes. Viola! Perfect room temperature eggs. I do that more than remember to take eggs out to sit at room temperature! ;)

ReplyDeleteYour cake looks so good Jaime! Great idea to use extra blueberries - you can never have too many. I did a cranberry version but I can't wait to try the blueberry version.
ReplyDeleteI don't really like nuts either so I'm going to leave them out of my topping next time. I also do the same thing that you do, start making something and then realize that I neglected to soften the butter etc.

ReplyDeleteI love this cake! I'm glad you put more berries in it! You used frozen berries, did you thaw them before adding or just add them frozen?? When I need room temp eggs and forget I put them in a bowl of warm water for a couple minutes.

ReplyDeleteYou can actually warm your eggs up for 5-10 seconds in the microwave.

Your cake looks great!! I love the extra blueberries--and the fact that you heated your eggs to room temperature in the oven...sounds like something I would find myself doing! (In fact, sometimes I still my butter in there for a minute to get it to room temperature...risk maneuver). I wish I could have a piece of this awesome looking cake right now!

ReplyDeleteI do the same thing, but usually with the butter - including this time. So I followed some ones advice and shredded the butter and it came to temp much quicker.

I'm like you, I usually don't read the whole recipe through before I actually go at it so my ingredients are all solid as a rock and cold. The crumb cake looks awesome, your blueberries almost look like chocolate chips though, which I'm sure would be great also in the cake. Yum!
